A simple and delicious vegetarian (except for the butter ghee) dish using Urid Beans - a type of black gram with a soft nutty centre. (Serves 4)
Ingredients:250g
Natco Urid Beans, soaked overnight, washed and drained
700ml Water
3 garlic cloves finely chopped
1 onion finely chopped
2 tomatoes finely chopped
2 green chillies finely chopped
1 tsp salt
2 tbsp
Natco Butter Ghee1 tsp
Natco Cumin Seeds1/2 tbsp
Natco Garam Masala1/2 tbsp fresh coriander
Method: 1 Add the soaked and washed beans to the water, bring to the boil and simmer for 40 mins or until tender.
2 Add the tomatoes, chillies, garlic, onion and salt and simmer for a further 15 minutes.
3 In a separate pan, heat the ghee and add the cumin seeds, fry until they sputter (do not burn).
4 Then add to the dal mixture and stir well.
5 Sprinkle th garam masala over the dish and finish with the chopped fresh coriander.
6 Serve with Natco Basmati Rice or Indian breads.
