The winner of the 2008 Garam Masala Taste Test on UKTV's Market Kitchen programme. Our Garam Masala is a traditional blend of aromatic spices from a secret recipe used since the days of the Raj. Garam Masala literally means mixed or blended hot spices.
Although originating in Northern India the use of Garam Masala is widespread throughout India. This is a spicy pungent blend similar to curry powder but with a sweeter taste. It can be used in pilafs, biryanis, some meat dishes (it has a natural affinity with lamb) and onion based sauces for meat and poultry. It is also used to top curries and to season fruits and steamed vegetables.
Sprinkle a little into any curry at the end of cooking or sprinkle on chicken or other meats for a sweet and spicy finish. Also goes well with just a little sprinkled onto rice or pasta salads to add a warm and spicy note.
To make a chicken marinade combine 1 teaspoon of Garam Masala with one tablespoon of lime juice and a half cup of plain yoghurt.
'Garam' means 'hot' and 'Masala' means 'spices', the spices in this mixture were used to 'heat' the body according to the ancient ayurvedic system of medicine.

Culinary UsesGaram Masala has a wide variety of uses and is a kitchen cupboard essential if you are into Indian cooking. It is used in cooking meats, soups and yoghurt dishes but its main culinary use is as a finishing spice, added near the end of cooking or sprinkled on as a condiment.
