Gits Khaman Dhokla Mix 180g
A yellow coloured, steam baked favourite snack from Gujarat in Western India. A light mix of lentil flour and wheat flour which is made in a baking tray and sliced into squares.Eat with chutney or pickles for a light and savoury lunch - goes great with our Bombay Spread!

COOKING INSTRUCTIONS:
1 Pour hot water into a large pan or baking tray that will be large enough to take your dish or baking tray containing your dhokla mix - this is so you can steam bake the dhokla in an oven. Alternatively, cook the dhokla inside a dish in a large steamer.
2 Blend 60ml of oil and 200ml of water. Pour into Khaman Dhokla and mix gradually.
3 Blend very slowly and gently with the minimum amount of stiiring until the batter is smooth.
4 Pour batter into a shallow dish or baking tray with sides.
5 Now place into the larger dish containing the hot water (or steamer) and steam bake on a high heat for around 20 minutes or until the dhokla has risen and looks light and spongey. Remove and allow to cool slightly.
6 Heat 2 tbsp Ghee or oil and 1 tsp Mustard Seeds together. When the seeds start to crackle remove from the heat. Add a teaspoon of Asafoetida powder and continue cooking gently for a few seconds more. Remove fom heat.
7 Spread the oil and seed mixture evenly over the top of the dhokla pancake and add 2 tsp chopped coriander leaves and some fresh grated coconut if available.
8 Allow to cool and cut into 2 inch squares. Serve with chutneys.
