All the spices and herbs required to make the dish are included and are measured exactly to make cooking simple. LAMB ROGAN JOSH RECIPEShopping List For Additional Ingredients To Make This Dish:700g Lamb Shoulder or Braising Steak
4 Medium Tomatoes
1 Large Onion
2.5cm Root Ginger
3 Cloves Garlic
1tbsp Tomato Puree
100g Full Fat Yogurt
5tbsp Cooking Oil
Salt to taste
Handful Fresh Coriander (for Garnish)
Preparation:Trim the lamb of excess fat and cut into 3cm cubes.
Finely slice the onions.
Peel and crush the garlic
Grate the root ginger
Finely slice the tomatoes
Chop the fresh coriander coarsely
Cooking Instructions:1 Heat the oil in a large non-stick frying pan or wok and fry the lamb in batches over a medium heat until it turns brown. Set aside.
2 In the same pan fry the onions until they turn golden brown. Lower the heat, add the ginger and garlic, fry for 1 minute stirring vigorously.
3 Add the chopped tomatoes and Bhajiman Sachet 1 and fry for 1 minute.
4 Add the lamb cubes and their juices and add the Bhajiman Sachet 2. Mix and stir.
5 Stir in the Bhajiman Sachet 3, the tomato puree and the salt to taste. Cook for 5 minutes then add 125ml of water. Bring to the boil. Cover and simmer on a medium heat for around 40 minutes or until the lamb is tender, stirring occasionally to prevent sticking to the bottom of the pan.
6 Now stir in the yogurt and stir well.
7 Taste and add salt if necessary.
8 Garnish with the fresh coriander and add the lemon juice to taste.
9 Serve with rice or Bhajiman Bombay Potatoes and Bhajiman Spiced Dhal.
